Watermelon, Feta, and Black Olive Salad

Ingredients

  • 4 cups cubed watermelon
  • 1/2 can black olives
  • 1/2 cup crumbled feta
  • 1/4 cup thinly sliced red onion
  • 1 lime, juice of
  • 2 tablespoon extra virgin olive oil
  • 1/4 cup fresh mint, chopped
  • Salt and pepper, to taste

Instructions

  1. Place cubed watermelon in a large serving bowl.
  2. Add olives, breaking each on in half with your fingers
  3. Top with crumbled feta and chopped mint leaves.
  4. Add sliced red onion if desired.
  5. In a small mixing bowl, mix together lime juice, olive oil, salt, and pepper.
  6. Pour dressing over watermelon mixture and toss to coat.
  7. Allow to chill in fridge for 1 hour before serving.
