For the Pies

  • ½ cup (113 g) butter (room temperature)
  • 2 cups (240 g) all-purpose flour 
  • 1 tbsp (8 g) cocoa powder
  • 1 large egg
  • ½ cup (112 g) buttermilk
  • 1 cup (200 g) light brown sugar
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt

For the Filling:

  • 1 cup (200 g) powdered sugar
  • 1 cup marshmallow fluff
  • ½ cup (113 g) butter (room temperature)
  • ½ tsp vanilla extract
  • Gel food colors (blue & red)

How to Make 4th of July Whoopie Pies

Step 1: Preheat the oven to 350F (180C).

Step 2: In a big mixing bowl, beat the butter and sugar until the color turns light and the consistency gets fluffy.

Step 3: Then add the egg, vanilla extract, and buttermilk. Continue to mix with a whisk.

Step 4: Sift the flour, cocoa powder, baking powder, and salt.

Step 5: Add the dry ingredients to the wet ingredients. Stir with a spatula. (The consistency won’t be very thick.)

Step 6: Divide the batter into two bowls. Add red color into one bowl and add blue one to the other bowl.

Step 7: Allow the batter to rest in the fridge for 10 minutes.

Step 8: Take one scoop of dough and place it on the tray. Divide the dough equally in half because each cookie will have one of each color. Repeat with remaining dough.

Step 9: Flatten the dough by pressing lightly with your hand.

Step 10: Bake in the oven at 350 degrees for 8-10 minutes. Allow your little cakes to cool after removing from the oven.

Step 12: While the cakes are cooling, in a large bowl, whisk together the butter, marshmallow fluff, powdered sugar, and vanilla extract.

Step 13: After the mixture reaches a uniform consistency, add it to a piping bag, squeeze a small amount between the cakes, and cover it with the other colored cake.
